Tropical Oat Waffles, anyone? Yes, please!!

Hi, everyone! Hope you're having a great day! Today I'm posting this amazing waffle recipe but also some information about Diabetes and the consumption of fruits like pineapple.

Many of us have heard this: "Since I have Diabetes I can't eat pineapple because it will increase my blood sugar". This is one of the multiple nutrition myths that I'm trying to solve for you, because you deserve accurate information.

So, to solve this myth I have to say that you certainly CAN include fruits like pineapple in your diet. The trick here is that you can control the portion size and also remember that pineapple has naturally occurrent sugar so you can combine it with other macronutrients like protein or fat to delay the digestion process. This will help and avoid glucose spikes.

When I talk about portion size is that every fruit has a different one and with patients that have diabetes it is important to keep a carbohydrate intake of 15g (for snacks) which translates into 1/2 cup pineapple chunks, 1 medium apple, 1 medium pear, etc.

If you want to combine any fruit with protein or fat, how will that look like? Super easy! You can combine it with nut or seed butter, nuts, avocado, cheese, yogurt (can substitute for a dairy free option).

Remember fruits can have naturally occurrent sugars, but they also provide us with vitamins, minerals, fiber, antioxidants, which are all essential for our bodies.

In this case since the recipe has pineapple, they are rich in Vitamin C, manganese, fiber, they are low in sodium and potassium (which is important in people that have Diabetes since they can also have an underlying kidney disease).




 

Now the yummy #recipe!


Ingredients:

  • 1 cup rolled oats*

  • 1/3 cup almond milk*

  • 1 cup cubed pineapple

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground ginger

  • 2 eggs

  • 1 teaspoon baking powder

  • 1 teaspoon apple cider vinegar

  • Avocado oil


Method:

  • Place all the ingredients in a high speed blender (placing liquids first)

  • When you reach the desired texture, place 2 tablespoons on a greased waffle iron (or skillet if you want pancakes instead).

  • Repeat this process until you finish the batter.

  • Serve with your favorite syrup and a side of fruit or any topping that you desire!





Recipe Notes:

*You can buy the oat flour ready or you can make it at home by placing the rolled oats in the blender. Make as much as you need.

**Feel free to substitute the milk for the one you prefer. In my opinion almond milk taste great for sweet recipes.
