The Coziest Pressure Cooker Chicken Chili!

Hey everyone! Hope you're all enjoying your day!

I know it's cold in so many places so this Chicken Chili is the perfect comfort food for you!

Many of the ingredients required for this recipe are easily found on your pantry. Like the broth, tomato paste, strained tomatoes, black beans (if you're using canned) & the spices. Basically you can make this recipe any time you want.

The best part about it, besides chopping & dicing veggies, there is no more effort required to make the rest, because you only add ingredients to the pressure cooker or Instantpot, you wait until cooked & you're done! You end up having a cozy, delish & balanced meal!

Ingredients:

  • 1lb chicken breasts

  • 1.5 cups strained tomatoes

  • 3-4 tablespoons tomato paste

  • 1/2 cup water

  • 1/3 cup chopped onion

  • 1/2 cup black beans- drained (can include canned or homemade)

  • 1 teaspoon minced garlic

  • 1 teaspoon ground cumin

  • Handful of chopped cilantro

  • 1/2 large bell pepper- diced

  • 2 small tomatoes- chopped

  • Salt & pepper to taste

Method:

  • Chop & dice all your veggies

  • In your pressure cooker (or Instantpot) spray avocado oil & sautée the onion. When translucent, incorporate the garlic.

  • When the garlic is fragrant, add the bell pepper & tomato.

  • Once the bell pepper is tender, pour the strained tomatoes, tomato paste & water.

  • Season it, add the cilantro & allow it cook for 25-30min on high heat.

  • When done, shred the chicken, garnish with more cilantro & serve.

  • Enjoy!
