The BEST Peach Crumble Bars, I Heard They're Good for the Soul!

Hi friends! It's been a while since I posted a new #recipe on my blog!

I feel that this recipe includes many ingredients due to the fact that it has 3 different layers buuuut believe it or no it's not a #dessert that takes too long to make either.


A few days ago on stories I mentioned how certain combinations between #carbohydrates & fat or carbohydrates with protein could make a difference during the digestion process which can help you avoid those undesirable glucose spikes.

Simple sugars typically cause glucose spikes because they are digested very quickly. Unlike fat & protein, they take longer to break down, even more time when they have a complex & long chain.

Since this is a dessert recipe I decided to take the liberty to talk about this because treats can also have some added benefits! I know that it's a popular belief that desserts are ALWAYS "bad foods" we should stay away from. The majority, especially that ones that are not homemade can be higher in sugar (by no means I'm suggesting not to eat treats at restaurants/coffee shops) because you're not choosing the ingredients. But if you're making them at home you can decide which ingredients will be included in a specific recipe. That said, I decided to add a little protein boost to the crust to delay the digestion process due to the fact that this can be higher in simple sugars. It also includes ghee which also helps in delaying the digestion process & by this preventing a glucose spike and a sugar crash later on!

I feel that focusing on those little details can make a difference when we're cooking treats or any other kind of recipe! I hope you find this information interesting & loooove this recipe as much as me & my family did! Enjoy!




Ingredients for the crust:

  • 2 cups Nature's Eats almond flour

  • 1 scoop Vital Performance Protein - Vanilla Flavor

  • 1/3 cup walnuts

  • 2 tablespoons melted ghee

  • 1/3 cup raw honey


Ingredients for the filling:

  • 5 small peaches- diced

  • 1/4 cup Madhava Foods coconut sugar

  • 2 tespoons Bob's Red Mill tapioca starch

  • 1 teaspoon Badia Spices ground cinnamon

  • 1/2 teaspoon ground ginger

  • 1/2 teaspoon ground allspice

  • 2 teaspoons lime juice

  • 2 tablespoons water


Ingredients for the crumble:

  • 1 cup walnuts

  • 2 tablespoons almond flour

  • 2 tablespoons Badia Spices ground cinnamon


Method:

  • Preheat oven to 375F

  • Mix the ingredients for the crust in a food processor. Pulse until you get a sticky texture. Spread over a greased 9x9 baking dish (I usually grease it with Chosen Foods Avocado Oil).

  • Bake the crust for 8-10min or until golden from the top

  • Meanwhile the crust is in the oven, dice the peaches & place them in a medium saucepan along with the other ingredients for the filling. When it starts to have a caramel consistency, remove from heat.

  • Place the crumble ingredients in a food processor & set aside

  • When the crust is done, add the filling & spread it over.

  • Sprinkle the crumble all over the peaches

  • Bake for 16min or until the crumble turns golden brown

  • Serve & enjoy!
