Spring Vibes Ceviche


Hello, I hope you are having a wonderful day!

I am so happy that I will post an easy lunch or dinner recipe for you. As much as I reiterate on seasonal produce I am posting one that will allow you to use them and take advantage of the budget friendly hack I am always talking about!

If by any chance you do not like shrimp.. you can certainly switch it for fish, crab or even lobster.

On a recent poll of what recipes you are looking for, many of you are looking for easy dinner ideas. This can fit this request perfectly fine. It is nourishing full of veggies, protein and fat. To make it a full meal you can include some crackers to get your dose of carbs.

For this recipe, I am using pre-cooked shrimp just because it is a time-saver hack! You can most certainly cook it as desired and then incorporate it in this recipe.

So.... let's begin with this recipe!


Ingredients:

  • 1lb shrimp (pre-cooked) - chopped

  • Juice of 3-4 limes (depending on how sour you want it to taste)

  • Juice of 1 navel orange

  • 2 tomatoes finely diced (pick roma or tomatoes on the vine)

  • 1 jalapeño finely diced (omit if you do not like spicy food)

  • 1/4 red onion- finely chopped

  • 1.5 mangos finely diced

  • 1 avocado cubed

  • Lime zest

  • Navel orange zest

  • Salt and pepper to taste

Method:

  • Chop the shrimp and place it in a mixing bowl

  • Chop the tomato and place it in the bowl

  • Incorporate the rest of ingredients in the bowl

  • Mix well and let it sit for a few minutes in the fridge so the shrimp acquires all the flavors

  • Enjoy!
