Looking for 4th of July Inspo?

Hi! I hope you are enjoying this 4th of July!

I know that many of you are happy to celebrate with loved ones this day and food is a major component for any family or friend gathering.

For this reason, I wanted to make a blog post with all the yummy recipes you can make today! They are easy and crowd pleasers!

To begin with one of my favorites and one of my most popular recipes on Instagram:

Baked Plantain Tostones:

Ingredients:

  • 2-3 green plantain tostones

  • 2 tablespoons avocado oil

  • Salt to taste

Method:

  • Preheat oven to 425ºF

  • Remove the peel from the plantains and cut pieces of approximately 1-2 inches.

  • Sprinkle salt and pour the oil over the plantain pieces.

  • Place over a baking sheet with parchment paper

  • Bake for 10min, flip and press with the bottom part of a glass. Bake for 10min more.

  • Serve and enjoy!

What’s 4th of July without hot dogs, right? I have a recipe for a typical Guatemalan hot dog for you to try and enjoy! It has a secret (not so secret) ingredient that regular hot dogs are missing!

Guatemalan Hot Dogs:

Ingredients:

  • Nitrate free sausages

  • Hot dog buns

  • Mayo (love the flavor and benefits from mayonnaise made with avocado oil)

  • Mustard

  • Ketchup (the best ketchup out there is from The New Primal)

  • Cabbage

  • Guacamole (the “not so secret” ingredient)

Method:

  • Grill the sausages and bread until golden brown

  • Place the cabbage in a pot with water, ½ teaspoon thyme and ¼ teaspoon ground cloves. Allow it to boil until fully cooked.

  • Assemble your hot dog and enjoy!

If you are into Mexican Street Corn, I’m sure you will loooove this combo mixed with chicken! This is one of the best creations I have made, believe me when I say this: my entire family devoured them!

Mexican Street Corn Chicken Bowls:

Ingredients:

  • 1 lb shredded chicken

  • ¾ can corn kernels

  • 6 tablespoons mayo (made with avocado oil)

  • 2 tablespoons lime juice (adjust to preference)

  • 1 teaspoon chili powder

  • ¼ teaspoon cayenne pepper (adjust to preference)

  • ¼ crumbled queso fresco or cotija cheese

  • ¼ cup chopped cilantro

Method:

  • Place the chicken in an Instantpot or pressure cooker with some broth or water. Allow it to cook for 30min.

  • When it’s done, shred the chicken with 2 forks and set aside

  • Place the corn kernels in a baking sheet with avocado oil and broil for 3-4 min or until golden brown.

  • In a large bowl combine: mayo, lime juice, cilantro, spices (salt to taste), cheese, corn and chicken

  • Mix well, making sure everything is well coated.

  • Serve as a bowl with a carb (quinoa or rice) and veggies. You can also make it into a sandwich.

Appetizers are always fun and tasty, for this reason, please your loved ones with this delish Hummus recipe.

Classic Hummus

Ingredients:

  • 1.5 cups cooked chickpeas (soak overnight)

  • ¼ cup lime juice

  • ¼ cup tahini

  • 2-3 teaspoons minced garlic

  • 1/3 cup extra virgin olive oil (or avocado oil)

  • ½ teaspoon ground cumin

  • Salt to taste

Method:

  • In a food processor, place all the ingredients

  • Blend until it reaches a smooth creamy texture

  • Serve and enjoy with pita chips or pita bread

Have a happy and safe 4th of July!!
