Interested in Meal Prepping? Some of my basic tips and a yummy Beef Stroganoff Recipe

Hi everyone! Hope you're doing great! Today I'm posting this amazingly yummy recipe that looks very hard to make but it's very simple, full of flavor and nutrients! Uses a lot of pantry staples too, given the situation that we're currently living this is very helpful!

In this post I will provide you with great #MealPrep tips if you want to start doing it. To be honest I'm not the person that really plans everything and lists every single ingredient. A few of my starter points for meal prepping (before rushing to the grocery store):

  1. Check your fridge, freezer and pantry. You could save up a lot of money if you decide to use ingredients that you already have than buying everything from scratch.

  2. While building up a meal, consider including the three macronutrients: Protein, Carbs, Fats and Veggies (not a macronutrient but it's easy to miss!).

  3. Another important tip to consider is how much time and energy you have to cook this meal. Often times people overlook this and you can actually make really yummy meals and not take too long in the prepping time. Sheet pan meals are my go-to recipes when I'm in a hurry or I don't really feel like cooking something too elaborated. The secret with sheet pan meals is the marinade you use for veggies, protein and carb. You can make creamy sauces, tomato-based sauces or sort of vinaigrettes. You can season only with salt, pepper and garlic but remember that you can get tired of this flavor quicky!

  4. If you are beginning in your cooking journey and you are not quite sure where to start, you can always look for recipes for some inspiration! That way you can have an ingredient list and make sure you have some of the ingredients at home or know exactly what you are going to buy at the grocery store.

  5. Also, if you don't feel safe with cooking something too elaborated at first you can start with simple recipes. There's no shame in that, we all start somewhere. Lots of recipes have the difficulty level of preparation so that's always a helpful tool!

Ingredients:

  • 1 lb sirloin steak- cut in strips

  • 1/3 cup chopped onion

  • 1/2 cup beef broth (bone broth is my go-to)

  • 2 teaspoons paprika

  • 1 can of full fat coconut milk*

  • 2 teaspoons of tapioca flour**

  • 2 tablespoons lime juice

  • 2 tablespoons dijon mustard

  • 1 cup sliced mushrooms

  • 1 teaspoon minced garlic

  • 1/2 teaspoon salt

  • 1/4 teaspoon pepper

  • 2 cups of pasta***

  • 3 cups of water to cook the pasta

  • Avocado oil


Method:

  • Spray some avocado oil on a pressure cooker (or Instant Pot) and place the onion, when translucent add garlic and then the beef.

  • When the beef starts to get golden brown add the broth, mustard, lime juice and coconut milk.

  • Mix well and let cook for 20min.

  • Then open your pot, add the flour and mushrooms. Mix well with a whisk to avoid flour lumps.

  • Let cook for 5 more minutes or until it gets thick and creamy.

  • Serve over your favorite pasta and ENJOY!



Recipe Notes:

*I like using full fat coconut milk because it adds the right creaminess to the recipes.

**Feel free to substitute the tapioca flour for the one you prefer. Personally, I like the fact that you don't need to add too much tapioca flour for sauces to get thicker.

***I served the beef stroganoff over chickpea pasta. This is because it provides with more fiber and protein than regular pasta. But, feel free to combine it with the pasta you love the most.
