In the Mood for Chili? I have the BEST Recipe!

Hey friends! I know when it's cold we all look for cozy #recipes so this Roasted Tomato & Zucchini Chicken Chili will be the PERFECT meal for you!

I like how versatile chili can be that tastes so good even when you add some other veggies than the ones in the original recipe.

I know chili can be such a yummy comfort food but it does provide some health benefits! Yes, you read it correctly! The tomatoes you use for chili have an antioxidant called Lycopene & belongs to the carotenoid family. Lycopene is in charge of giving its color to tomatoes, grapefruits & watermelons.

It's important to eat foods that are rich in antioxidants since they help us fight against free radicals which are the ones that promote oxidative stress.

There are some observational studies that have found that it may reduce the development of certain types of cancer. In men, lycopene can help reduce the incidence of prostate cancer.

Something important that I think it's worth mentioning is that just by the consumption of tomato or lycopene rich foods alone is not going to help prevent the development of chronic conditions. It's the combination of physical activity, fiber, antioxidant & balanced meal intake that can really make that happen.

Ingredients:

  • 1lb ground chicken (can substitute for ground turkey or beef)

  • 1/2 large zucchini- diced

  • 3-4 large tomatoes

  • 1/4 cup onion- chopped

  • 1/2 teaspoon minced garlic + 1 garlic head to roast

  • 2 teaspoons italian blend

  • 1/2 red bell pepper

  • 2 tablespoons tomato paste

  • 1/2 teaspoon chili powder

  • Crushed red pepper (adjust to preference)

  • Salt & pepper to taste

Method:

  • Dice all your veggies & set aside.

  • Place the tomatoes & garlic in the oven at 400F for 20 minutes or until the skin is brown.

  • Meanwhile, in a pot with avocado oil, sautée the onion & when translucent incorporate the chicken. When the chicken is almost cooked, include the zucchini.

  • When the roasted veggies are done, place them in a blender with the spices & tomato paste.

  • When the sauce is ready, pour it over the chicken & veggies. Let it simmer for 10 minutes.

  • Serve & enjoy!
