Feta Cheese Pasta Trend


Hello there! I am glad you are reading this blog post as it has such an easy and tasty recipe!

I know I am a little late to the party with this trend but I am here now posting it for you!

As many of you on Instagram are mainly looking for easy-to-prep dinner ideas I am posting this one so you can do it at home for you and your loved ones. You can even make this if you have friends/family over and trust me it takes no time to make.

As I am here to help you build balanced meals I am breaking this recipe down for you! The pasta trend itself only includes the cheese, tomatoes and pasta (which count as carbs) it can be considered as a complete and balanced meal. However, feel free to add chicken, steak or even some kind of plant-based protein (tofu or tempeh) if the cheese does not feel satisfying enough. Also, adding more veggies can certainly add more flavor and that is definitely the goal!

Regarding pasta, like I love to say pasta is not healthy or unhealthy. Nevertheless, you can choose a pasta with a higher fiber content to promote a healthier gut. Although if you are looking to make this recipe vegetarian, choose a pasta that includes plant-based protein like: chickpea, lentil or quinoa pasta. These options provide a good amount of fiber per portion.

Now that we discussed some important points, let's get to the recipe!


Ingredients:

  • 1 block of feta cheese

  • 2 cups (or 500g) cherry tomatoes

  • 1 cup mushrooms- sliced

  • 1 teaspoon Italian blend

  • Salt & pepper to taste

  • 2-3 garlic cloves (add more or less to preference)

  • 1/4 cup avocado oil (or another high smoke point oil)

  • Grilled chicken strips (if desired)

  • 2 cups whole grain/plant-based pasta

Method:

  • On a baking dish, place the tomatoes, mushrooms, feta cheese & seasonings.

  • Pour the oil on top and mix the seasonings with the veggies

  • Bake for 30 minutes at 350F - 355F

  • While it's baking, cook the pasta as indicated on the box

  • Grill chicken, if desired

  • After the 30min, while the cheese is hot mix it with the veggies.

  • Incorporate the pasta and chicken. Mix well

  • Serve and enjoy!!
